GTA 6 hasn’t shipped, so there’s no official activity list — only what Rockstar’s own park copy states outright, what confirmed shops strongly imply, and what we can read into screenshots. This page sorts every side activity we’ve spotted into those three honesty tiers, instead of pretending a screenshot is a confirmed game system. Hunting and fishing get an actual “Confirmed by Rockstar” badge because Rockstar’s own words say so; everything else is labeled for exactly how solid it is.
Hunting

Rockstar’s own copy for Mount Kalaga National Park explicitly lists hunting as a park activity — the strongest confirmation on this whole page. Screenshots show a hunting camp in Grassrivers and armed figures moving through Kalaga’s backwoods.
Fishing

Same source as hunting: Rockstar’s Mount Kalaga description names fishing directly alongside hunting and off-roading. What the rod-and-reel loop actually looks like hasn’t been shown.
Tattoos

The Electric Fang tattoo shop is a confirmed Ultimate Edition business. Every mainline GTA since San Andreas has let you get inked at a shop like this, so a tattoo activity is a safe bet — but Rockstar hasn’t demoed the actual mechanic.
Vehicle Tuning

Rideout Customs and One-Eyed Willie’s are two confirmed Ultimate Edition mod shops (full build photos on the vehicles page). Customizing your own car there is the obvious implication, but Rockstar has only shown finished builds, not a shop interface.
Kayaking
Vehicle confirmed
The Crest Kayak itself is confirmed — one of two Ultimate Edition Safehouse vehicle picks (see the vehicles page). Whether paddling around Grassrivers is its own tracked activity, or just traversal, isn’t detailed.
Golf
Unconfirmed — screenshot only
A Cal Hampton screenshot reads as a golf course. GTA has done playable golf before (GTA San Andreas, The Ballad of Gay Tony), but Rockstar hasn’t confirmed anything here beyond the background.
Billiards
Unconfirmed — screenshot only
A pool table is visible in a bar scene with Cal Hampton and Jason. Bar billiards tables have shown up as pure scenery in past GTAs without being a minigame — treat this the same way until Rockstar says otherwise.
Bar Fights

Lucia is shown mid-altercation in official media. Melee combat is obviously in the game — every GTA has it — but a distinct “bar fight” activity, versus just world combat, isn’t confirmed.
Diving

Official Leonida Keys screenshots show sea turtles and reef fish at close range, underwater. Swimming and underwater exploration already exist as far back as GTA V; a dedicated diving activity on top of that isn’t confirmed.
Racing

A dirt bike on a Mount Kalaga trail reads as a race setup. Street and off-road races are a GTA staple, but no race system has been shown for GTA 6 specifically.
Car Washing

An NPC washes a car in an Ambrosia screenshot. This reads as ambient world detail — background life, not necessarily a player-facing activity.
Nightclubs & Strip Clubs
Unconfirmed — screenshot only
Vice City nightlife includes at least one strip club, shown across both trailers. GTA has had these as visitable locations since GTA IV — a returning fixture rather than a confirmed new system.
